A butcher is an ancient trade, whose duties may date back to the domestication of livestock, butchers formed guilds in England as far back as 1272. Today, many jurisdictions offer trade certifications for butchers. Some areas expect a three-year apprenticeship followed by the option of becoming a master butcher.

Changing tastes and the scarcity of the eel has meant that the number of shops selling this traditional working class food has declined to just a handful mostly in east London. The shops were originally owned by one or two families with the earliest recorded, Manze's on Tower Bridge Road being the oldest surviving dating from 1908. Generally eels are sold cold and jellied and the meat pie and mash potato covered in a green sauce called liquor.

  • We are looking from behind a group of red uniformed meat market traders who are manhandling joints of pork from the back of a meat wagon at Macau's main meat market, on the Rua Sul do Mercado de Sao Domingos, just off the Avenida de Almeida Ribeiro, in Central Macau. The men have on hooded red tunics that hide the bloodstains of dead animal carcasses, a very practical choice of colour (color). One man has half a pig on his shoulders while another holds a leg in his left hand. The animal carcasses look heavy and they are both struggling under their weight. There is much more meat to be offloaded from the truck and the men queue up to take their turn and remove them for sale inside the market building. Besides historical Chinese and Portuguese world-heritage relics, Macau's biggest attraction is its gaming business. Its gambling revenue in 2006 weighed in at a massive £3.6bn - about £100m more than Las Vegas.  Administered by Portugal until 1999, it was the oldest European colony in China, dating back to the 16th century. The administrative power over Macau was transferred to the People's Republic of China (PRC) in 1999, 2 years after Hong Kong's own handover. Macau's name is derived from A-Ma-Gau or Place of A-Ma and this temple dedicated to the seafarers' goddess dates from the early 16th century.

Using a handmade instrument of death, carved from beach flotsam, the man raises his hands to again bring the club down on the dying fish whose skull has already been smashed by repeated blows. Next it will be gutted efficiently with sharp knives and immediately plunged into ice containers to cool the flesh, reducing the risk of self-deteriorating flushed blood which renders it unfit for consumption under EU law (its live internal core temperature is 40 degrees centigrade). When as many fish have been caught before dark using hand and line method, rather than nets, the boat presses on to the processing factory at Himmafushi where they're filleted and boxed for export to Europe and in particular, for UK supermarkets like Sainsbury's.

  • Using a tabloid newspaper, a father seeks shelter from sunshine while sitting in a council deck chair. On the front page of the paper is a headline saying "Butchered' showing a picture of an unfortunate young 3 year-old boy murdered by a maniac axeman. Close-by is the man's own son who is digging a hole furiously in the sand. He looks uncannily like a slightly older version of the murdered boy. This coincidence is heightened because of the body-language of the digging lad, seemingly about to chop an unseen object with his red spade. Both man and boy are on holiday at the northern English seaside resort of Scarborough, North Yorkshire and they are otherwise having a great time on South Beach, near the Grand Hotel building, high up on the cliff.
