  • Laden with loaves of bread, crusts and slices in supermarket bags, three local people are involved in a feeding frenzy for a herd or ‘eyrar’ (the collective noun)  of swans who gather impatiently for their turn under the pier at Southport, Cheshire. Dozens of these beautiful birds are also surrounded by a flocks of geese, ducks and pigeons in this wintry scene alongside the chilly low-tide waters of Marine Lake, under the ironwork of Marine Parade.

  • The Serpentine Lake, Hyde Park, London, UK. The Serpentine Lake is situated in Hyde Park, London’s largest central open space. The Serpentine Swimming Club was formed in 1864 ‘to promote the healthful habit of bathing in open water throughout the year’.  Its headquarters were beneath an old elm tree on the south side of the lake, a wooden bench for clothing being the only facility.  At this time London was undergoing rapid expansion and Hyde Park was now in the centre of a densely populated built up area and provided a place of relaxation to its urbanised masses. Now, the club has its own (somewhat spartan) changing facilities and members are  permitted by the Royal Parks to swim in the lake any morning before 09:30.  They race every Saturday morning throughout the year, regardless of the weather.

  • The weeks hard fought haul of birds, ducks and geese. Mallards, Widgeon, small Canada Geese, Pheasant, Pintail ducks and Grouse (also known as 'chickens') are laid out prior to processing, cleaning and packing. This haul provides the hunters with a few birds each for the year.

  • In a field at the town of Boofzheim in the eastern French Alsace region, an elderly Frenchman harvests some of his self-grown carrots crop. Having left his old bicycle standing at the kerb of a narrow access road and in front of a field full of maturing maize, he bends down with much effort to dig in his fork or spade into the rich Alsace earth and lift out his vegetables to take home. This landscape is typically French or German (Alsace borders the western side of Germany and saw much tragic action in WW2) where maize is a nutritious foodstuff for cattle and also for ducks and geese who are force-fed it locally in the making of fois gras and pate.

A farmer has cut the throat of a duck, draining the body and especially the liver of blood. After tapping the head with a knife to render the animal unconscious. Newly-killed carcasses are strung up on a special rack. France produces and consumes the most Foie Gras in Europe using the French Gavage method of forcing ducks or geese to consume vast quantities of corn mash down the oesophagus two weeks before slaughter.
